De Bortoli are driven by a philosophy that great wine begins in the vineyard. Minimal handling and interference throughout vinification is the goal. Wine should have a sense of place and speak of the soil whence it originates. Harvests of Semillon from choice Riverina vineyards are selected for their lovely citrus characters. Parcels of King Valley Sauvignon Blanc are sanctioned for their expressions of passionfruit and cut grass. Semillon is quickly pressed and cold settled for a slow ferment at cooler temperatures. Sauvignon Blanc is crushed and held on skins before pressing for maximum extraction. Batches remain on fine lees and stirred for several months before the final assemblage. Alcohol 12.0%
