Established during South Australia's earliest settlement, the historic Mamre Brook House still stands today as the spiritual home of Saltram. Mamre Brook Cabernet is made from fruit grown to mature vines, planted to distinguished low yielding sites in Barossa Valley, which have been supplying Saltram for generations. Growing conditions are idyllic for harvests of optimum ripeness, a concentration of flavour, exceptional structure and superb tannins. Vinified in traditional eight tonnes open top fermenters for up to a fortnight, before being pressed off skins and racked into a a high proportion of new French and American oak barrels for sixteen months maturation before assemblage. Alcohol 15.0%
