Pikes extraordinary Riesling vines are planted to soils in the Polish Hill River area of the Clare Valley, generally regarded as one of the safest viticultural districts in Australia, in terms of pest and vine disease. The climate is considerably cooler and the soils are also quite unique to the rest of the region. The grapes positively flourish here in the red brown earth, clay and stoney soils. Fruit is harvested and pressed, inoculated by a pure yeast culture, then treated to vinification in controlled fermenters at a closely managed 12C to 15C for nigh on a month, retaining the lavish qualities of the inimitable Polish Hill.
