Dunes is fully bottle fermented and has spent time on lees, developing alluring biscuit and strawberry aromas and a lively, fresh, creamy feel to the palate. Dunes is assembled from Chardonnay and Pinot Noir grapes that are born to sparkle, nothing is left to chance and there is geat attention to detail throughout the vinification. Sites that are capable of producing fruit with the desired sugar and acid levels, whilst being generous with heightened flavour profiles are selected for Dune. Gentle handling in the winery ensures the maximisation of varietal characters whilst achieving harmony and delicacy in the final Cuvee. A period of rest on sedimentery yeast lees to infuse Dunes with enticing autolysis characters, to add rich textures, and to enhance the mouthfeel and palate weight.
