Fruit is harvested from estate operated vineyards, vintaged at full ripeness to capture all the rich fruit characters and delivered to the McGuigan wineworks in the Hunter Valley. A combination of new world and tradiotional winemaking techniques are employed to extract maximum flavour, deep colour and ripe tannins from the skins prior to fermentation and maturation. Vinification is carried out over a period of several days in temperature controlled tanks following the inoculation to select strains of yeast. Post fermentation the batches are matured and assembled to construct a smooth, approachable fruit dominant wine. Subtle use of oak has accentuated the richness of the wine and achieved additional complexity.
