A collation of harvests from two superior Cabernet vineyards in Eden Valley, low cropped sites in the Moculta and Keyneton districts, yielding two tonnes or less per hectare. A variety of vinification techniques are employed, according to the individual character of each parcel, extended skin contact time and daily plunging to gently extract good colour, rich flavours and refined tannin. The active components are pressed to a selection of seasoned and new French oak hogsheads for completion of ferments, malolactic and twenty months maturation, naturally clarified, lightly fined and bottled with minimal filtration.
