To ensure grapes are harvested at maximum flavour concentration, the ripening is closely monitored with regular tastings by the winemaking team within the vineyard. Fruit is harvested throughout the cool of night as each parcel achieves the most optimum flavour profile and acid balance. Grapes are rapidly transported to the Jacobs Creek wineworks, crushed and chilled. The free run juices are drained and clarified with minimum skin contact, followed by a cold fermentation at 13ºC to 15ºC after inoculation by choice yeasts, which serve to enhance the delicate Riesling flavours.
