Jaraman is the fusion of two exceptional parcels of fruit from iconic wine regions, a harmonious co-existence of two distinct terroirs. Immense care is taken to ensure varietal and regional flavours from the vineyard are carried through to the bottle. Minimal intervention winemaking techniques are applied. Fruit is harvested from the Taylor Clare Valley estate vineyard and from distinguished sites in the cooler altitudes of Eden Valley. Grapes are gently whole berry pressed and cold settled into fermenters. Free run juices are racked and a relatively neutral yeast strain added. A long vinification at cooler temperatures is followed by minimal fining and filtration. Alcohol 11.5%
