The Penfold brand began as an Adelaide Hills winemaker, the company has returned to its roots for parcels of the finest Chardonnay in Australia. Grapes are all hand picked into small bins and whole bunch pressed. Juices are filled to barrique directly from the press and allowed to undergo a natural fermentation, sans inoculation. Every barrique is its own unique 225-litre ferment. Enhanced mouthfeel and complexities are achieved by fermenting on solids, using a selective mix of new and aged French oak. The wine undergoes 100% malolactic fermentation, all completely natural. Barrel fermented and matured for nine months on lees in a selection of mostly new, exclusively French oak barriques. Alcohol 12.5%
