A very highly rated year, from a cracker of a growing season across South Australia, especially for the pure varietals. A dry and cool stretch throughout the vintage lead to generously flavoured Cabernet berries which ripened long and perfect in the favourable Indian summer. Typically redolent with peppermint and eucalypt, heady berry fruit aromas, all the trademarks and fragrances which identify good Langhorne Creek Cabernet, the palate is full bodied with exceptional fruit flavours, pearly oak, and a refined finish. A vintage which provided the Wolf Blass winemakers with top quality fruit, the Cabernet Sauvignon achieved ideal colour and flavour. Sourced exclusively from the best vineyards within the premiere Langhorne Creek region, a distinguished appellation renowned for its unique soils, nourished by the Bremer River's flooding, which drives the development of powerful characters and distinctive flavours within the fruit. After crushing, the Cabernet underwent fermentation in traditional open pots with regular plunging to extract colour and flavour. A portion was also fermented in new American oak barrels. When fermentation was completed the wine was aged in a combination of French and American oak barrels for two years.
TASTING NOTESAromas of plum and menthol, cassis and sweet dark foresty fruits, toasty coconut oak, loam and sweet pitch. The virility and plummyness continues along the full length of the palate, matched by the tell-tale menthol and the pearly coco-ribe-like oak. Bits of mint, blueberry and coal, a wine of excellent length and texture, there's real handsome breadth to the palate, it's express-train full bodiedness carries the flavours of dark berry, menthol and toasty savoury oak. Deliverence of pearl-like tannins, this beautifully harmonized purebred of a wine is driven by the rich berry flavours, well integrated wood, and softness all around. A well developed red to savour with flavoursome meat dishes, and high quality cheeeses. |
