An assemblage of Chardonnay, Pinot Noir and Meunier with excellent intensity of flavours grown to premium, fully mature cool climate, low yielding vineyards. Great emphasis is placed on the selection of fruit and the determination of base wines, each component must contribute finesse and elegance to the final Cuvee. In the manner of champagne, no one fruit or other character is dominant on either bouquet or palate. Components are included for the purpose of progressively building an impact through to the long finish. Treated to a secondary ferment in bottle and three years ageing in bottle on sedimentery yeast lees, Salinger is disgorged in the traditional Champagne way.
TASTING NOTESLight straw hue, fine bead, persistent mousse. Refined and delicate with enticing lemon/ citrus fragrances, yeast and nougat notes, courtesy of lees maturation. A palate of great finesse, built on a base of excellent cool climate fruit characters. Brioche, nuttyness and yeast notes marry with apple and citrus flavours. Salinger shows great length and elegance in support of a creamy middle palate before a crisp, refreshing finish.
