Parson's Nose is intended to offer some respite from the more serious and stern religious connotations that are at times associated with Chapel Hill. McLaren Vale is deservedly recognized as one of the worlds leading Shiraz appellations. This can be attributed to the vitality and generosity of the region and its wines. Stylistically the aim with Parson's Nose is to showcase primary McLaren Vale Shiraz character as supported by a velvety tannin structure. Oak plays a supporting role and is utilised delicately, providing complexity without overriding the expression of fruit.
Chapel Hill works closely with its group of growers, regularly visiting the vineyards and labouring alongside them to achieve the best possible outcomes from each site at vintage. The aim is to achieve a healthy balanced vineyard where vines are neither too vigorous nor too stressed but grow the desired yield with moderate canopy. There are many factors impacting vine health and balance as it requires management with a passion and understanding to achieve success annually and maintain long term sustainable outcomes. Grapes are strategically harvested to avoid any overripe jammy flavours, ferments are gently handled and followed by maturation in a selection of the finest French oak barrels. Alcohol 14.5%
TASTING NOTES
Deep garnet red. Decadent aromas of blueberry and star anise dusted with cinnamon spice. The luscious palate is brimming with satsuma plum and red berry/ licorice flavours that seamlessly integrate with gently textured oak and firm persistent tannins. To accompany braised meats with tomato and pasta or well ripened, washed rind cheese.

About the Chapel Hill Winery
Chapel Hill takes its name from the historic ironstone church built at the property in 1865
Chapel Hill Winery is entirely in the Hills Face Zone. In 1990 environmental consultants were briefed to advise regarding development in this sensitive rural preserve. The estate obtained planning approval from the Minister for Environment and Planning in 1991, and built the winery in 1993. Chapel Hill is the embodiment of the wine and food experience delivered using the best of environmental practices by people who are passionate about their product and the McLaren Vale winegrowing region.
