Fleur de Lys draws upon parcels of Chardonnay and Pinot Noir, harvested from the House of Seppelt's highly specialized sparkling wine vineyards, fortuitously positioned within the most superlative mesoclimes. Fruit is vinified to traditional methods before laying to rest for an extended maturation on yeast lees, to construct a wine of great character and complexity. Treated to the full Methode Traditionelle, a secondary bottle ferment and two years maturation on sedimentery yeast lees, Fleur de Lys is disgorged and treated to a relatively dry measure of liqueur doseage before resealing. A Sparkler of splendid balance and immense length, derived from the slowly ripened cool climate fruit.
