St. Henri is significantly matured in old, 1460 litre vats that allow the wine to develop, imparting minimal, if any oak character. The focal point for St. Henri is about the collation of the finest Shiraz available to Penfolds, vinified to express the qualities of outstanding fruit. Conceived by John Davoren in the early 1950s alongside development of the mighty Grange, St Henri is a later incarnation of a wine grown to a vineyard adjacent to Penfolds called Auldana Cellars, originally vinified by Frenchman Leon Edmund Mazure who is also accredited as the creator of sparkling burgundy. St Henri is treated to a year's maturation in a well seasoned collection of larger format oak.
