Stonehaven's Padthaway Vineyard has been managed for decades to produce soft, fruit driven, textured styles that drink well for many years. The winemaking team liase closely with the growers to ensure the fruit is of the highest standard. Grapes are harvested at optimum maturity, only when the fruit flavours and tannins have ripened thoroughly, a judgement that's made in the vineyard by tasting the berries directly off the vines. Fruit is harvested to a schedule based around the development of good flavour profiles, refreshing acidity and fine tannins. The fruit is vinified in a combination of open and static fermenters then pressed to French oak barriques for maturation.
