The Taylor's vineyard team identify parcels which can best express the charm and grace of a pure Clare Valley Merlot. The aim is to produce a wine which displays a rich middle palate with good fleshy fruit and silky mouthfeel. Grapes are destemmed without crushing, into a mix of fermenters for inoculation by choice yeasts and a warm, gentle vinification, to enhance fruit character while retaining distinct regional varietal expression. Upon completion, batches are pressed and treated to malolactic, followed by transfer to a selection of seasoned French and American oak barrels for a year's maturation, before assembling into the finished wine, bottled after a minimal filtration.
