Extensive resources and logistic management are employed to ensure that each parcel is picked at optimal maturity. When the fruit quality is excellent, displaying clean varietal characters and ripe, juicy acids, grapes are harvested throughout the cool of night and immediately transported to the winery for dejuicing with minimal skin contact. Every effort is taken to reduce phenolic extraction from skins, minimising the need for fining.
