Domain Chandon takes aim to capture the affable charm of Victorian Sauvignon Blanc. Well rounded, crisp and dry with a juicy, flavourful palate, a contemporarily styled white wine, brimming with layers of sub tropical fruit, underpinned by herbaceousness and minerality. Fashioned from some of the finest harvests in Victoria, the perfect wine for every long and relaxed luncheon, serve chilled, idyllic as aperitif and perfect partner to good food.
Fruit is sourced from upper reaches of the cool climate Yarra Valley, Strathbogie and Goulburn. The Chandon team are focused on sourcing parcels off vineyards that are planted to soils which are ideal for Sauvignon Blanc. Vines are meticulously maintained to achieve dappled light throughout the canopy, ensuring the retention of pristine flavours. Grapes are harvested throughout the cool hours of morning as they can best begin to display optimum intensity and acid balance. Fruit is pressed and the juices held in contact with lees for a short time to liberate complex flavours and add texture. Batches are racked to fermenters and inoculated by a strain of yeast that's highly complementery of Sauvignon Blanc.
Pale straw with green hues. Fresh and inviting bouquet of guava, passionfruit and ripe lime characters underpinned by a subtle note of fresh herbs. The profile on the palate displays intensity and crystal clarity of vibrant varietal fruit, well supported by refreshing juicy acidity and wonderful finesse. The perfect white to inspire company into lively conversation, a great accompaniment to all your favourite faire.
