Yarra Burn pioneered sparkling winemaking in the Yarra Valley, they continue to raise the threshold of quality under a team of Australia's most accomplished masters. Purity of fruit character, textural richness and a measure of refinement characterise Yarra Burn. The holy trinity of Pinot Noir, Chardonnay and Meunier are selected from blocks of superior vine, planted to the undulating aspects of Yarra Valley. A dominance of cool climate fruit builds structure, elegance and finesse, Yarra Burn will rise to every occasion.
From premium Victorian vineyard, harvested in the cool of night and gently pressed. At height, restricted growth and slow ripening lends itself to intensely flavoured fruit of rich complexity. Every Yarra Valley hillside offers its own nuances of sun exposure, soil, rainfall, even snowfall, and height. Grape varieties are matched to their ideal conditions, then tended with vigilance and precision at Yarra Burn's prized vineyard sites. Nothing is taken for granted, the idyllic microclimes exact a price, as every detail has to be just so. Each parcel of juice is further fined to guarantee structural elegance, an extended maturation on yeast lees infuses further complexity and builds character.
Crystal clear, gold hued, a fine persistent bead. Yarra Burn displays the distinct citrus and green apple characters, complemented with fresh yeasty brioche on the nose. The palate is bright and lively exhibiting citrus, toast and mushroom characters. This elegant and textural wine exhibits a rare depth of flavour and complexity.

About Yarra Burn Winery
In August 1975 David and Christine Fyffe purchased a property near Yarra Junction that has softly undulating good soil and fabulous views to Mt Donna Buang
In the spring that followed they erected makeshift houses to stay in while they planted vines on their days off from running Mayerling Cellars. Initial plantings were 2 acres each of pinot noir, cabernet sauvignon and half an acre of gewrztraminer, which was fairly quickly replanted with merlot when it lost popularity. The original name Settlement Vineyards was already registered so they settled on Yarra Burn, as the property is located half way between the two small townships of Yarra Junction and Wesburn. Part time study in viticulture and oenology at Roseworthy and Charles Sturt and help from consultants contributed to Yarra Burn's success. In late 1977 the Fyffes sold their bottleshop to build a house and an estate winery at Yarra Burn. They were encouraged and assisted by their friends at Jean Jacques by the Sea in establishing an onsite restaurant. Yarra Burn»
