Not far from the Four Pillar Ginworks at Healesville, are some of Yarra Valley's most auspicious vineyards. Eaux de vie. The felicitous berries are treated to daily stirring over the course of eight weeks maceration, to be bottled without any filtration, for the development of expansive fruit richness and engaging Yarra Valley Shiraz complexity.
Deep purple colour. Perfumes of cypress and fresh pine, evergreen needle, citrus and spice, peppery, dense raspberry notes. The palate is lovely and sweet, turning iridescent pink when mixed with tonic or soda, a long juniper and maghrebi spice character on the finish. Mesmerising as a dirty pik Mmartini or beguiling Gin Cosmo.
