Slainté was developed by Lyn Lark to answer the growing interest in a unique Australian Whisky Liqueur. By 2005 the Lark Distillery had cellared enough stocks of mature whisky to supply the market, and the inaugural edition of Slainté was released. A marriage of mature single malt whisky with a distilled spirit of herbs and spices produced in a smaller copper pot still. The two are carefully combined to give the right complexity of character, spiciness and sweetness, whilst maintaining the delightful overtones of the whisky.
Unlike the Scots, Lark age whisky in custom made quarter cask one hundred litres barrels. A far more expensive way to mature spirits, nevertheless they create deep, complex whisky. Mr. Jonathan Scott of the Glengoyne Distillery, Dumgoyne, Scotland, recently likened Lark small cask whisky as similar to an 18 Years Scotch from a typical 400-500 litre barrel. Consider also the oak. Most of Lark's barrels were originally used for ageing premium Australian Port and Sherry, arguably some of the best examples of fortified wines in the world. These large casks are then re-coopered down to the hundred, fifty and twenty litres sizes, at which time they are shaved and heavily toasted
Colour is a rich honey gold. The bouquet unravels a delicate balance between spice and herbs, hints of smokey malt follow. The palate is pleasantly sweet without being cloying or over the top, fresh with a herbal entrance to the palate, leading to a lingering, rich, malty character. The finish is long, lingering and delightful. Fashioned from the Lark Distillery's finest Malt Whisky, infused with exotic spices for your good health and drinking pleasure.
