Harvests of Merlot are collated from good vineyards, identified during regular inspections by the Jacobs Creek team, Grapes exhibiting concentration of flavour and soft, refined tannins are essential to the Jacob's Creek style. Parcels are treated to vinification in static fermenters for a week or more at temperatures between 18C to 28C. The inclusion of whole berries, gentle pumpovers and rack returns are applied throughout the course to liberate attractive berry flavours, vibrant colour and optimal tannins. Only those batches worthy of the Jacobs Creek moniker are assembled into the final wine, the aim being to construct a Merlot of distinctive varietal fruit character and soft tannin structure.
