There's so much about Blue Pyrenees that's very old world, the standards of viticulture and philosophy of winemaking itself. A collation of parcels harvested off the Blue Pyrenees estate vineyard, planted on the edge of a breathtakingly beautiful indigenous forest on the challenging terroirs, just outside Avoca township. Components are crushed and vinified at warmer temperatures over the course of a week in traditional 15-tonne static fermenters, followed by a further week of maceration on skins for optimal extract of colour, fruit and tannin. Upon completion, batches are pressed and racked into a selection of seasoned French oak barriques for eighteen months maturation. Alcohol 14.0%
