Great wine begins in the vineyard, the finest harvests of Pinot Grigio should be treated to minimal intervention throughout the winemaking process. The source of fruit for this fully labelled, estate grown Pinot Grigio is picked off vines that have been husbanded by Victoria's most decorated winemakin team. Fully ripe fruit is harvested and pressed without crushing to retain vitality, batches are chilled to 5C before vinification at higher temperatures on natural solids, building texture and mellowing the palate without sacrificing varietal character. Ferments are treated to an extended time on sedimentery lees to infuse complexity and enhance varietal richness.
