The Devil's Corner vines are closely managed to encourage optimal ripening, characterised by excellent flavour profile, judicious acids and exemplary retention of aromatics. The winemaking team's goal is to harness the pristine fruit characters of the Apple Isle, into distinctive styles of wine that speak of their provenance. Following harvest, grapes are immediately pressed, juices are run off skins and cold settled to remove solids. Some parcels remain unsettled to retain a measure of solid elements. Components are sent to fermenters for vinification under strict temperature controls, maximisizing the integrity and impact of vibrant fruit characters.
