Fruit is sourced mainly from the De Bortoli Riverina vineyards, with portions from sites in the Adelaide Hills and King Valley to add freshness. Chardonnay grown to warm microclimes like the Riverina develops generous stone fruit flavours. The Semillon component imparts greener, slatey elements, contributing structure, balance and length. The Chardonnay juice is handled oxidatively (no pH) and fermented cool to increase texture and longevity. The Semillon juices are clarified and fermented cold to retain fresh fruit characters. A small component of Montage underwent malolactic fermentation, another was fermented in old French oak barriques and left on lees for several months to develop complexity. Alcohol 12.5%
