An exemplar in Sauvignon Blanc, by one of Margaret River's finest family estate owned and operated wineries. Salitage are renowned for the quality of their fruit and skill at minimalist vinification techniques. Extended resting on lees has contributed mouthfeel, a mouthfilling, textural palate and enticing complexity. Envigorating, fresh and crisp, to be served lightly chilled, as the prominent varietal fruit characters and crisp acidity make a refreshing aperitif style.
The Salitage winery has been designed with a minimalist approach, from the handling of the fruit throughout the entire vinification process, to produce wines which have structural complexity and intense flavours. Treehouse wines are made in the Salitage winery using estate grown fruit, complimented by parcels grown to adjacent vineyards around Pemberton. Sauvignon Blanc is harvested off Salitage Block 8, parcels are kept separate and grapes are pressed batch by batch. Juices are treated to a term of cold settling, inoculated and vinified in fermenters for a fortnight at 15C. Upon completion, components are held on sedimentery yeast lees for nine months prior to the assemblage, racking and bottling.
TASTING NOTES
Pale straw in colour. A range of tropical fruit aromas, pear, gooseberries and passionfruit with flinty notes and subtle herbal undertones. The palate is fruit driven and nicely weighted, exhibiting mineral accents and clean varietal fruit. A touch of tropical, mineral and green vegetable characters, soft acidity and long, lingering, flavoursome finish.
