Owning and operating a boutique vineyard means working amongst the vines, pruning by hand through the cold winter months, chasing birds out from the nets over summer and tipping harvest buckets full of delicious fruit into the back of a tractor. Parcels of Pinot Gris are whole bunch pressed, barrel fermented and treated to nine months on sedimentery yeast lees in a selection of fine French oak barrels.
