The estate wineworks at Bilbul produces world class fortified wines. Great strides have been taken throughout the years to ensure the delivery of outstanding quality and value. Fruit can be sourced from over three hundred hectares of vineyard and from those of eminent local growers. Grapes are picked very ripe, the base wine is fermented to 10º Baume then fortified with a neutral spirit to halt fermentation, retaining the wine's natural sweetness. The desired flavour profile is achieved by identifying the most suitable batches throughout the course of fermentation and assembling these back with aged stocks of Tawny material which have been matured under a combination of French and American oak.
