The undulating aspects of the Yarra Valley are endowed with mesoclimes that are idyllic for the nurture of sparkling wine grapes. In sophisticated European styling, the triumvirate of requisite Franco varietals have been fashioned by the venerable De Bortoli into a delightful pink bonbon oozing of raspberries and floral.

After generations of sowing the Yarra Valley's finest vineyards and crafting some of the nation's most memorable vintages, De Bortoli know that the character of sparkling wine can vary from year to year. Rococo is an assemblage of several vintages grown to choice vineyards. Chardonnay for creaminess and palate weight, Pinot Meunier for perfume and spice, Pinot Noir for complexity and grace. All the fruit must be gently pressed to avoid any nasty, bitter flavours, juices are fermented in cask and in tank at elevated temperatures to blow off the fruitiness. The base wines, some fresh and some aged, are assembled into a creamy and complex wine which expresses the charming De Bortoli style. Alcohol 12.0%
