The five Bordeaux varietals of Cabernet Sauvignon and Franc, Malbec, Petit Verdot and Merlot, a multi award winner. Seamless yet deeply complex, fashioned from the pick of Barossa fruit, there is awesome length to Quartage, as its cornucoppia of berry fruit flavours unravel over a framework of fine grain tannins and spicy lingering oak. Internationally renowned, Shotfire has one key goal, to satisfy red wine enthusiasts by over delivering on quality.
Thorn-Clarke take great pride in retaining the most accomplished viticultural team, it has ultimately been a consistency in the quality of fruit at harvest time which has brought the estate such enduring success. The grapes are crushed and destemmed into fermenters. Yeast is added immediately once in fermenter and the ferments are pumped over twice daily to maximise colour, tannin and flavour extraction. Cooling is used to ensure ferments remain in the 22C to 25C range which will achieve maximum fruit expression. Pressing then occurs approximately seven days after crush, followed by transfer into a mix of tight grain French and American oak barrels for a year's maturation.
TASTING NOTES
Deep inky purple. Intensely lifted, perfumed nose of great complexity, a tri colour of berries and chewy liquorice supported by spicy French oak. The palate is full bodied and complex, Cabernet Sauvignon and Franc provide wonderful up front berry fruits, Malbec and Petit Verdot contribute great depth of flavour and intensity, Merlot gives the palate a wonderful suppleness.

The Barossa Valley was settled in the early 1840s by small farmers and artisans seeking religious freedom from their native Silesia. The warm, fertile valley was ideal for ripening winegrapes and Australia's largest wineries made their headquarters amongst the vineyards. In the cooler ranges above the Barossa, known as Eden Valley, English settlers created large pastoral runs for sheep and cattle, but also planted vineyards to ensure a supply of table wine.
