Unlike many better known marques, the noble House of Billecart Salmon has elected to remain small in size and limit their production, focussing on quality and consistency over quantity. A cooler, temperature controlled fermentation, inoculated to finely aromatic yeasts, serves to preserve the freshness in the final wine and infuse the bouquet with the most exquisite expressions. Various components are treated to lees batonnage, malolactic fermentation and a spell in Burgundian oak barrels.
