The cool climate vineyards of the Piccadilly Valley and Lenswood sub-regions of the Adelaide Hills are the source of fruit for this sparkling wine.

Bridgewater Mill wines have always been about the fresh, clean taste of the Adelaide Hills. Pinot Noir and Chardonnay from south facing slopes was hand picked and delivered to the winery in pristine condition. Parcels were then chilled, gently pressed and gravity settled before racking to separate the clean juice before fermentation in a combination of old French oak barrels and insulated tanks using the winery's selected native yeast strains. The base wines were then carefully selected and blended before tirage for secondary fermentation in bottle using further, unique strains of yeast. They were allowed to mature on yeast lees in bottle prior to disgorging.
