From their base at the old Hardy's Siegersdorf winery, deeply rooted in the heart of the Barossa, Cockatoo Ridge understands the philosophy of good fruit-driven sparkling burgundy. A decidedly juicy Cuvee, delivering complexity and heightened flavours of chocolate and berries, softened by soothing notes of creamy vanillan and a jujube-like chewyness, all brought together by a refreshing grapey acidity. Inspired by the intensity and colour of the Australian landscape, this uniquely Australian wine is highly akin to all good cuisine.

Cockatoo Ridge regularly identify sources of premium fruit, as part of their standard operating procedures, one of the key factors which makes most everything from this estate always so attractive. The Cuvee was crafted to specifications which required a sophisticted and rigorous collation of grapes, for the express purpose of fashioning a sparkling Burg, and no other wine. A vigorous testing and trialling regimen, to arrive at the the perfect pitch of fruit, tannin and varietal definition, was applied before determining the finished wine.
