The obsessiveness of the Penfolds winemaking fraternity is clear to see with the Bin 707, regularly choosing to withhold release of this exceptional Cabernet, in vintages when fruit doesn't come up to scratch, 2000 and 2003 are recent no-shows. Full bodied and with famous cellaring potential, Bin 707 holds a secure place among the ranks of Australia's finest Cabernets. 2004 was an excellent year for first class Cabernet across the Penfolds vineyards, Bin 707 under Magnum can only be classed as outstanding, from a superlative vintage that will develop into a memorable wine.
Max Schubert endeavoured to create a masterful Cabernet which would meet the highest standards and challenge the Europeans. It was not until the early sixties, a cuvee worthy of the stature of Bin 707 was released. In cooler, sometimes well-regarded vintages, Penfolds cannot sorce Cabernet that is suitable for the Bin 707 style. With no 2003 released, the 2004 marks a welcome return. Above average winter rainfall led into a promising vintage, which was characterised by mild conditions up until February, followed by hot weather conditions throughout March and April. South Australia fared well and produced wines of elegance and intensity. Fifteen months maturation in new American oak hogsheads. Alcohol 13.5% Acidity 6.9g/L pH 3.52.
TASTING NOTES
Winemaker comments by Peter Gago. Deep and dark with a dense core. The nose shows fruit to the fore, cassis, raspberry coulis, an underlay of red liquorice, black olive, soy and artefacts of well hidden oak. Youthful, lively and alluring. Textured, lush and chewy, with an even coating of talc-like tannins, the palate has a compression'of flavour, without heaviness or over-extraction. Marmalade, orange and tangerine citrus notes align with those that decry Cabernet. The wine is poised and balanced, with highly stylised and crafted oak, highly defined and structured, showcasing the finest cut of ripe, low yielding Cabernet. This is a wine of depth and layers of flavour, at a sensible alcohol level.

Dr Christopher Rawson Penfold was born in 1811, the youngest of 11 children. He studied medicine at St Bartholomew's Hospital, London, graduating in 1838. Like many doctors before and since, Dr Penfold had a firm belief in the medicinal value of wine. Before he left Britain he had obtained vine cuttings from the south of France and these were planted around the site of the modest stone cottage he built with his wife, Mary, at Magill on the outskirts of Adelaide in 1845.
