Omni NV is fashioned from Chardonnay and Pinot Noir, bottle fermented and aged on lees for a luxurious twelve months, achieving a wine of elegance and great depth of character. Omni exhibits excellent persistence, the rich fruit characters are complemented by beautiful citrus acids and a yeasty complexity. A truly popular everyday sparkling wine that enjoys to be enjoyed and keeps on giving in terms of appeal and value.
By one of Australia's most highly decorated sparkling winemaking teams. Hardy's routinely take time out from perfecting national trophy winners, to create fully approachable, everyday wines of excellence and elegance. A gentle pressing of the fruit is followed by a temperature controlled, cool primary vinification on light solids in tank, retaining all the fresh fruit driven characters of the grapes. Treated to a full malolactic fermentation which contributes complexity and creaminess. A highly skilled assemblage and the extended maturation has produced a wine of consistent style and quality with universal appeal. Omni is further tiraged with a select yeast strain and aged on lees for twelve months. Alcohol 11.8%
TASTING NOTES
Crystal clear with a fine and persistent bead. Omni exudes lifted fruit aromas over a rich and flavoursome palate. A complex wine exhibiting the butter toast characters of Chardonnay and strawberry/ cream of Pinot Noir. Bottle fermented and matured on yeast lees, this complex and satisfying sparkler exhibits mature fruit varietal expressions with creaminess and defined yeast characters. A fresh acidity ensures the palate finishes crisp and dry. Serve chilled with your favourite faire.

About the Hardys Winery
Thomas Hardy left Devon in 1850 at the age of 20 and migrated to the new colony of South Australia
He established a winery on the banks of Adelaide's River Torrens in 1853. His Bankside winery was the start of an outstanding family wine business that grew to become one of the world's great wine companies. Thomas Hardy was a self-made man, a pioneer of immense character. With a mixture of energy, determination, shrewd judgment, innovation and a touch of daring, he pursued the highest standards in winemaking. At Bankside, and later at his McLaren Vale property Tintara, he focused on quality and craftsmanship. Tintara was to become the centre of Hardy's enterprise and by the late 1800s was one of the best-equipped and managed wineries in Australia. This success was substantially due to Hardy's initiatives in planting higher quality, lower yielding varieties rather than the coarser, heavier-yielding types more common at the time. His willingness to experiment with and to use novel equipment, much of which he designed and built himself, also contributed to this success. Hardys»
