A hand made Methode Traditionelle from parcels planted to superior terroirs on the slow ripening altitudes of Valley Eden. Vineyards were specially selected to grow the perfect fruit for this exquisite style of sparkling Pinot Chardonnay. Grapes are picked throughout the chill of night and barrel aged for six months on lees to infuse and enhance the magnificent depth of slowly ripened Eden Valley Pinot Noir complexity.
Grapes are picked, immediately crushed and de stemmed to ensure minimum skin contact or unwanted phenolic extraction. Chardonnay and Pinot Noir are separately fermented under cool conditions to preserve integrity and delicacy of base wine, assembled to build magnificent palate structure, texture and balance. Batches are re fermented in bottle and held on sedimentery lees for six months to maximise mouthfeel and introduce marvelous complexity.
TASTING NOTES
Creamy mousse and fine bead. Aromas of green apple, lemon cream and floral notes, strawberries and brioche, fresh baking and salty cashew. Vibrant palate, just cut slices of green apple and citrus notes, toasty brioche follows through, vibrancy, balance and elegance, a refreshing acid line and good fruit to match, some great kiwi and guava characters.

The Thorn-Clarke family has a long history in the Barossa, six generations of involvement in the region's world famous wine industry
The Barossa Valley was settled in the early 1840s by small farmers and artisans seeking religious freedom from their native Silesia. The warm, fertile valley was ideal for ripening winegrapes and Australia's largest wineries made their headquarters amongst the vineyards. In the cooler ranges above the Barossa, known as Eden Valley, English settlers created large pastoral runs for sheep and cattle, but also planted vineyards to ensure a supply of table wine.
