The secret to the sucess of [yellow tail] is quality, selection and maintaining the highest standards of viticulture. All [yellow tail] wines are made to be enjoyable and to express clear varietal fruit characters. Company founder John Casella hand selects only the best parcels of Shiraz. He looks for good flavour, perfect acid, fine tannins, excellent balance and attractive colour. The warmer climes of Riverina provide the backbone of fruit, yielding grapes of big, ripe concentrated flavour. Harvests from cooler climates contribute crisp acidity, elegance and finesse. Once grapes are pressed, the components are fermented on skins in contact with oak. Temperatures are controlled to achieve maximum colour and tannin extraction.
TASTING NOTES
A vibrant, deep purple colour. Nose of lifted cherry aromas with spicy notes accompanied by blackberry bouquets, liquorice, pepper and plums. A full flavoured, fruit laden palate, medium bodied, showing generous peppery/ plum characters over lingering spiced berry flavours. The touch of vanillin oak adds balance and softness to the long, pleasant finish. A match to barbecued sausages, tomato pastas and tasty cheese.

About the Yellow Tail Winery
The Casella family has been making wine in the Riverina since 1965
Filippo and Maria Casella emigrated to Australia bringing with them their know-how acquired through three generations of grape-growing and winemaking in Italy. Recognising the potential of the region, Filippo purchased a farm in the town of Yenda, New South Wales. After selling the grapes from his farm to local wineries, he decided in 1969 that it was time for a new generation to put its winemaking skills to use, and the winery was born. Yellow Tail»
