He looks for good flavour, perfect acid, fine tannins, excellent balance and attractive colour. The warmer climes of Riverina provide the backbone of fruit, yielding grapes of big, ripe concentrated flavour. Harvests from cooler climates contribute crisp acidity, elegance and finesse. Once grapes are pressed, the components are fermented on skins in contact with oak. Temperatures are controlled to achieve maximum colour and tannin extraction.
