Hillcrest Road was established to one and a half hectares I10V clone Chardonnay in 1993, with a view to creating a limited release, flagship Mornington sparkling Cuvée. Over two decades later, the cosseted vines are yielding a harvest of the most exquisitely balanced fruit, intensely tropical in nature, invigorate by the most refined chalky acidity. Treated to the luxury of full Methode traditioneele, an extravagant three years bottle maturation and remuage on yeast lees, brimming with the finest mousse and articulating the opulence of autolysis richness.
TASTING NOTES
Fine bead and elegant mousse. Puff pastry, custard and citrus tart autolysis behind the purity of cut green apple, white flowers, lemon and almonds. Linear, energetic and driven yet its intensity is cloaked in a pillowy mouthfeel. Plenty of extension through a drying, faultless finish.

About the Circe Winery
Circe is a partnership inspired by growing up on the Mornington Peninsula and a love of Pinot Noir
Dan Buckle and Aaron Drummond met at Mount Langi Ghiran in 2007. After a vintage of Shiraz it was inevitable that the conversation would turn to any other varietal except Shiraz. With both of them growing up on the Mornington Peninsula, they were keen and curious as to what they could do with Pinot Noir from such great soil. Drummond & Buckle acquired a vineyard along Hillcrest Road, Red Hill on the Mornington Peninsula, three acres undervine being roughly half I-clone Chardonnay and half MV6 Pinot Noir, with north facing rows, moderate spacing and deep red volcanic basalt soils.
