A pure, single vineyard Adelaide Plains Shiraz, harvested off vines, forty five years of age, grown to red clay over limestone soils on the Varacalli property at Angle Vale. Real wine, unmanipulated and true, reflecting the commitment and authenticity of grass roots, garage winemaking. A combination of whole berries and whole bunch, indigenous yeast vinification in ten tonnes, open top fermenters is followed by gentle pumpovers and a traditional basket press, before completion of ferments in a mix of oak and tank. The finished wine is matured in well seasoned, large format, five hundred litres American oak puncheons before bottling unfiltered, unpolished and raw, with plenty of power, the Adelaide Plains way.
TASTING NOTESDeep, dark red colour. Spicy, blackberry nose with hints of cherry, dark chocolates, tobacco and mint. A robust palate with layers of berry flavours, plums and pepper spice, chocolate and aniseed. Firm tannins, bright acids and background oak in support of the long, lingering finish.
