The stuff of legends, who is there in Australia who has never heard of Cockfighter's Ghost? Originally crafted from Shiraz grown to a small block of ancient Hunter Valley vines, the Cockfighter's range are still made at the historic Glen Elgin wineworks, established 1895. Harvests of the finest Shiraz grapes, exhibiting vibrant spiced plum flavours and lined by juicy tannins, grown to good vineyards in McLaren Vale, have been set aside for vinification into the deeply captivating Cockfighter's Ghost.
Cockfighter's Ghost retain excellent sites in McLaren Vale which yield the most splendid Shiraz grapes. The winemaking team work closely with growers to produce an exemplary regional varietal wine with good concentration on the palate, solid structure and intensity of fruit. Following the harvest, grapes are promptly transported to the wineworks at Pokolbin for immediate crushing and pressing, throughout the cool of night to retain maximum freshness. Fruit is vinified in temperature controlled fermenters to a regimen which achieves maximum extraction of colour, flavours and tannin. Upon completion, the finished wine is matured in a selection of 300 litres French oak barrels before bottling. Alcohol 14.9%
TASTING NOTES
Black red, purple hues. Nose of lifted ripe blackcurrants, sweet black mulberry, black pepper and subtley fragrant oak. The palate is intense with ripe plums, bramble and spice, which combine with cordial Shiraz tannins and French vanillin oak to achieve good depth of flavour and fine length. A very ready to drink now Shiraz alongside spicy Asian recipes or grilled meats.

Poole’s Rock Vineyard was founded 1988 in the Broke Fordwich district of Hunter Valley by McQuarie banker David Clarke
Located thirty kilometres west of the main Hunter vineyard region, the original 32 hectare property is named after the monolith on its southern boundary, which in turn takes its name from a prominent local character who lived in the area over 100 years ago. Four prime hectares were planted solely to chardonnay vines, an endeavour described by legendary Australian winemaker, Murray Tyrrell, as the viticultural showpiece of Hunter Valley. David Clarke spent two years in search of this ideal site, one that would provide a suitable microclimate and alluvial soils conducive to the production of premium chardonnay. He engaged viticultural consultant Di Davidson to assist with the vineyard’s design. Development and planting commenced in spring 1988. They took meticulous care in establishing the vineyard, which is fully irrigated. The vines are now fully mature and producing remarkable quality fruit. Pooles Rock»
