Western Australia offers outstanding growing conditions for the Bordelais varietals and Moondah Brook have been at the cutting edge of Cabernet viticulture for decades. Fruit is harvested throughout the cool of night to preserve fresh varietal characters, parcels are vinified in static fermenters for ten days before being gently pressed off skins for completion of ferments. Batches are racked and inoculated for malolactic, followed by eight months oak maturation before assembling into the finished wine.
