The philosophy at [yellow tail] is to make great quality wines that are also great fun to drink. Yellow Tail is a Cabernet Merlot that's very easy to get accustomed to. A soft, plum and cherry flavoured wine with scents of black currant, supple oak and fragrant spice. Immediately approachable and a pure pleasure when served alongside meat and tomato pastas. Australia's most popular label, [yellow tail] is enjoyed in every corner of the globe. Over two million glasses of [yellow tail] are consumed each and every day! The secret to success is the quality fruit, grown to the most stringently managed vineyards. The warmer climes of Riverina encourage development of big, concentrated flavours. Cabernet and Merlot grapes are crushed and the stems removed. Fruit is fermented on skins in contact with oak under a strict regimen of temperature controls, to ensure maximum retention of varietal character and tannin extraction. Yellow Tail is estate grown, vinified and bottled at the Yenda wineworks, ensuring it's handled to the most exacting standards from vine to glass.
TASTING NOTES
Bright crimson colour. Bouquets of violet and currant, mudcake and prune. A mouthfilling palate with luscious blackberry and plum characters complexed by herb and peppermint, infused by light sweet oak and supported by tender tannins. Combines the bramble of Cabernet with the smoothness of Merlot, a dinkum Australian style of wine.

About the Yellow Tail Winery
The Casella family has been making wine in the Riverina since 1965
Filippo and Maria Casella emigrated to Australia bringing with them their know-how acquired through three generations of grape-growing and winemaking in Italy. Recognising the potential of the region, Filippo purchased a farm in the town of Yenda, New South Wales. After selling the grapes from his farm to local wineries, he decided in 1969 that it was time for a new generation to put its winemaking skills to use, and the winery was born. Yellow Tail»
