The secret to success is the quality fruit, grown to the most stringently managed vineyards. The warmer climes of Riverina encourage development of big, concentrated flavours. Cabernet and Merlot grapes are crushed and the stems removed. Fruit is fermented on skins in contact with oak under a strict regimen of temperature controls, to ensure maximum retention of varietal character and tannin extraction.
