Originally a Christian Bible church and parish school, Chapel Hill is set within a historic nineteenth century stone church. Situated on a picturesque hill in the McLaren Vale's magestic hills, views from the cellar door are breathtaking. The emphasis has long been on environmentally sustainable viticulture and vintages of the finest quality. Chapel Hill's estate grown Shiraz is endowed with an intense, opulent mouth coating palate, exhibiting a unique combination of power, elegance and grace.
Shiraz is sourced off vines, all growing on their own rootstock, aged between seventeen and thirty seven years. Fruit is harvested off a number of blocks and separately open fermented to ensure that each parcel articulates the unique character of each site. All ferments are maintained on skins for a minimum of eight days, gently basked pressed and returned. Throughout twenty months maturattion in a selection of new and seasoned, French 300 Litres oak hogsheads, each individual barrel is racked and returned periodically to seamlessly integrate tannins into the structure of the wine. Chapel Hill is bottled is unfined and unfiltered. Alcohol 14.5%
TASTING NOTES
Deep garnet red colour. Hedonistic levels of blueberry, pimento and roasted almond characters. The harmonious integration and balance of these fruit flavours with the gently textured oak, is further enhanced by the defiant, mouthfilling savoury tannin structure. To accompany slow cooked braised meats with tomato sauces or ripe, washed rind cheeses.

Chapel Hill takes its name from the historic ironstone church built at the property in 1865
Chapel Hill Winery is entirely in the Hills Face Zone. In 1990 environmental consultants were briefed to advise regarding development in this sensitive rural preserve. The estate obtained planning approval from the Minister for Environment and Planning in 1991, and built the winery in 1993. Chapel Hill is the embodiment of the wine and food experience delivered using the best of environmental practices by people who are passionate about their product and the McLaren Vale winegrowing region.
