A decorous Shiraz wine in the robust, fully ripened, effusive plum and pepper style which can only be achieved from fruit grown to the higher, coolly ripened aspects of Valley King. The most intensely flavoured grapes are harvested off diligently husbanded vines, painstakingly pruned to limit yields and concentrate flavour. Treated to a traditional vinification, minimal handling and a spell of ageing in the highest quality French oak, The Stables fills the palate with dark plum fruit, well polished integrated oak, seasoned by complex high country spice.
King Valley provides the extended ripening conditions which can develop Shiraz grapes to their fullest. Vineyards are kept well pruned for the purpose of achieving no more than average yields. Canopy and vineyard management work take up most of the available daylight hours. The vines are mostly dry grown but some supplementary water can be added if the soil moisture drops for lack of rain. Some applications of organic fertilizer through the irrigation system keep the vineyards looking at their best. Traditional winemaking techniques are embraced within a modern approach to vinification. Shiraz grapes are handled promptly and minimally to retain ripe berry characters and fine tannins in the final wine.
TASTING NOTES
Dark plum red in color with crimson tinge. Lifted blackberry and plum nose, spicey raspberry over hints of white pepper and vanilla oak. Good carryover of blackberry and red berry fruits with some chocolate and vanilla barrel development showing. An excellent balance of fruit and oak, soft tannins and a long velvety finish complete this highly satisfying wine.

About Gracebrook Wines
The Gracebrook brand has evolved from the passion David and Rhonda Maples have for the land and what it has to offer
David and Rhonda acquired very early in life the horticultural skills that would later become invaluable when applied to the vineyards of Gracebrook. Both being from farming backgrounds, Rhonda's parents owned and operated a dairy farm here in the King Valley, across the road from what is now their home farm. During Rhonda's holidays and weekends she would work in the local vineyards, either handpicking fruit or pruning vines. David's parents also owned and ran dairy farms as well as growing beef cattle, pigs and later on growing tobacco on a small farm located at Edi.
