For connoisseurs of remarkable and unique wines, spectacularly concentrated, the Emily represents an exceptional expression of Heathcote Shiraz. Aged completely in French oak, a beautiful floral-scented perfume, aromas of blueberries, blackberries, asphalt, and subtle notes of wood as well as incense. Possessing great structure, compelling depth, remarkable intensity and richness, and a 60-second finish, this compelling wine of both power and elegance should hit its prime in 3-4 years, and last for two decades.
Superior single vineyard Shiraz fruit with a component of co-fermented Cabernet Franc, the quality of the soil and microclimate are astonishingly well represented in the finished wine, long and complex, massively structured, an extroverted palate with generousity and confidence. Jasper Hill have taken aim at making great wine, with the preservation of nature's flavours, complexities and balance, by using minimal intervention in the vineyards and in the cellar - to allow the individual vineyard's terroir and sense of place to express itself. Massive with fiery tannins and sleekness from the Cabernet Franc, a profound and distinctive wine, sophisticated fruit lurks beneath the spice-driven highlights of the complex cuvee.
TASTING NOTES
Tasty elements drift up with the alcohol, virulent menthol-like aromas, doses of mint and a touch of eucalypt, Emily carries it very well, with an elegance to the marry of fruit and tannin and a lovely dish of sweet, dry earth, coal and aniseed. Earthy and briary, riddled with roasted tomato flavours and spotted with blackberry, this is an elegant wine that's good and fine and worth cellaring if you can wait that long. Unique citrussy oak and cedar in the background, there are delicious woodspice and dusty characters, spices and herbs, sweetness and savouriness, a complex and intriguing wine, there's a lot going on and the tannin structure is superb. As always, Emily will age gracefully and tremendously.

Jasper Hill are produced entirely on the estate using organic/biodynamic principles. The estate produce their own organic compost and have never used synthetic chemicals on either the vines or the soils, since vineyards were planted in 1975. Viticultural practices are as close to nature as possible: own rooted vines (ie. not grafted on to American rootstocks to confer Phylloxera resistance), no irrigation whatsoever, minimal tillage, natural inter-row mulching leading to broad bio-diversity, in turn giving depth and intensity to our wines. Only hand pruning of the vines and hand harvesting of the fruit can allow the human connection to the living soil. Jasper Hill»
