From the exceptional 1991 vintage, this smooth and elegant edition is a blend of 75% Cabernet Sauvignon and 25% Shiraz, sourced from McLaren Vale, Coonawarra and Clare Valley. The bouquet has the typical Black Label intensity of rich chocolate, mint and fruit aromas complexed by vanilla oak. Plump and hedonistic, full bodied and intense with blackberry fruits, integrated wood and incredible warmth, this sumptuous and historic wine sits ready to drink alongside succulent, slowly braised meats in rich wine-based sauces.
Vintage 1991 was destined for cellaring and bottle development, the harvest of grapes for this wine came early, on the back of a warm and favourable growing season with slightly lower yields. The exacting fruit requirements for the Wolf Blass Black Label means parcels are sourced from low yielding vines. Harvested March to April, the Cabernet and Shiraz was harvested at night to make a better wine. The individual parcels of fruit were crushed and fermented separately before being transferred to new French oak barriques for fermentation. The wine was racked and matured for thirty months under a combination of American and French oak. Alcohol 13.2% pH 3.46 Acidity 7.0 g/L Sugar 1.6 g/L Winemaker John Glaetzer.
TASTING NOTES
On the nose and the palate the wine exhibits sweet peppermint characters with hints of chocolate, plum pudding and liquorice. Elements of plums and liqueured blackberry, real lusciousness, curls of dense chocolate, nutella and sweet steamed pudding. There's a spicy distinctiveness, as this wine develops into an astonishingly rich balance of flavours and essences, a soft fruit driven palate with excellent length and soft supple tannins, great depth, and a complex yet elegant structure. A rich red, as harmonious as it is complex, full bodied and beautifully structured, a wine that was built for cellaring and bottle development. Black Label is the perfect accompaniment to roasted rib eye or succulently prepared fowl and game.
