All great wines are a product of the perfect union between climate and soil. In Champagne however, the human element is more vital than any other winegrowing region. The people of Champagne have fashioned the soil and vines into the world's most specialized vineyards. Moët & Chandon's cellars are carved out of a great legacy of chalk topography that's unique to Champagne. The galleries, some of which date from as early as the company's foundation in 1743, stretch over 28 kilometres and are cut into several levels under the town of Epernay. Long roads, wide intersections, endless staircases and pavements on which millions of bottles are carefully stacked, these cellars are a subterranean city of wine.
