A noble rot Eiswein grown to the inhospitable climes of Niagara Peninsula, where the fruit is painstakingly hand picked under the most severe conditions. Classic botrytised Riesling characters, elegant citrus flavours of developed limes and grapefruit as well as ripe apricot and peach, followed by a slight mineral edge. Inniskillin Niagara is an outstanding experience, a superb and devastating wine, a gift from mother nature to wine enthusiasts everywhere, traditionally served chilled, alongside the most elegant nibbles and all fine faire.

Inniskillin is one of the great Noble Rieslings, Jack Frost's gift to the wine world. Harvested at the pinnacle of Canada's crisp winter, the grapes are naturally frozen on the vine and picked when the temperature drops to below 10C. Grapes are left on the vine well into December, harvested in a frozen state, most often in the middle of the night. Only a few drops of luscious nectar can be squeezed from each bunch, which is then expertly guided through fermentation to achieve the rich and rewarding experience known as Icewine. The ripe berries are dehydrated through constant freezing and thawing, a process that concentrates and intensifies the flavours, giving ice wine its immense complexity. Alcohol 9.0%
